Ingredients
- Russet potatoes 5 count
- Lean ground beef 2 lb
- White onion 1 count
- Garlic cloves 3 count
- Chili powder 2 tbsp
- Ground cumin 2 tsp
- Crushed tomatoes 28 oz
- Kidney beans (canned), drained and rinsed 15 oz
- Black beans (canned), drained and rinsed 15 oz
- Beef broth (or water) 1 cup
- Salt 1 optional
- Black pepper 1 optional
- Shredded cheese (optional) 1 optional
- Plain Greek yogurt (optional) 1 optional
- Green onions (optional) 1 optional
Steps
- Bake potatoes at 425°F for 50–60 minutes until tender (or microwave, then crisp briefly in oven). Can clean and wrap in tinfoil and place in crockpot for slow cooked baked potatoes.
- Brown ground beef in a pot over medium-high heat; add diced onion and cook 3–4 minutes.
- Add minced garlic and cook 30 seconds.
- Stir in chili powder, cumin, crushed tomatoes, beans, and broth. Simmer 25–35 minutes.
- Taste and season with salt and pepper.
- Split baked potatoes and top with chili. Add optional toppings.
