Chai Tea Concentrate

Ingredients
- Water 3 liter
- Black tea bags (Assam, or English Breakfast are acceptable) 12 bags
- Cinnamon Sticks 4 sticks
- Fennel Seeds 1 tsp
- Whole Star Anise 1 unit
- White Sugar 2 cups
- Vanilla Extract 1 tbsp
- Salt 1 pinch
- Oat Milk (Or your alternative) 2 quarts
Steps
- Simmer water and all whole spices, uncovered for 25 minutes.
- Remove from heat. Add tea bags and steep for 5 minutes. If you steep too long, the tea becomes bitter.
- Strain out the tea bags and spices completely.
- While hot, stir in sugar until fully dissolved.
- Add vanilla and salt. Cool and refrigerate.
- To serve: mix 1/2 cup concentrate with 1/2 cup hot milk (can use oat milk or any milk). I like to mix both cold and put in the microwave for 2 minutes. This is where the oat milk ingredient is used.. it's not used to make the concentrate**.
